Early Christmas Present

Stephanie and I usually exchange Christmas gifts early because we’re not good with suprises.  Last year she decided to blow my mind and get me a Shun chef’s knife.  This year, she followed up quite nicely…

That would be an Imperia pasta machine.  No more store bought pasta for me.  It’s all homemade from here on out!  It’s going to be woooooonderful.

Anyways, I’ve never made pasta before and I heard it’s a rough process the first few times.  Anyone have some experience with this?  Any tips you can offer me? I’m going to stick with The Food in my Beard’s guide for the first couple times, but after that I like to come up with my own methods.

The instructions that come with the Imperia are OK. They are essentially: Take pasta flour in a bowl, make a depression and crack an egg into the depression, then use a fork and combine the flour into the egg. Work the dough with your hands until it makes a ball (add water by wetting your hands as needed). Let it rest in the fridge covered with a wet paper towel for an hour, then pinch off a bit and run it through the machine at the largest setting. Fold it over and do it again. Sprinkle a little flour on the dough each time and rub it in to prevent it from being too sticky. Shorten the setting and keep rolling it through the machine until you’ve finished the smallest setting. Then roll it through the cutter to make noodles.

Thanks, Jason. I’m going to try it out tomorrow and the results will follow on here. Hopefully this works out.

How is this going for you? I make whatever pasta, wrap it and then lest rest for 30 minutes and then roll it out, cut and then hang it everywhere in the kitchen that I can. Still having a few consistency issues, but I love making homemade pasta.

Trial one didn’t go too well. Still need to perfect my technique, I guess!

I don’t know anything about making pasta by machine (or hand for that matter) so I don’t know how this turns out or anything, but it’s worth a try I guess. Hope you perfect it soon!!
